Recipe: Lemon Rice with Curd


One of the most favorite dishes of South India “Lemon Rice”. A healthy, quick and easy food, can be eaten for Lunch or dinner which gives you amicable flavour of lemon Juice & Curry leaves.

Let’s see how to make tasty Lemon Rice
Ingredients:
– 1 cup cooked basmati rice (you can use any rice if not basmati)
– 2 tsp oil
– A pinch of Asafoetida (Hing)
– 1 tsp mustard seeds (Sarson)
– 7-8 Curry leaves
– 1 tsp turmeric
– Salt as per taste
– 2 small lemon
– 2 Green chilies chopped
– 1/2 cup Peanuts
– 1 cup Channa dal & urad dal mix
Instructions for cooking
– Wash rice until water turns clear. Then transfer it to pressure cooker with water.
– Once the rice is cooked transfer it to a plate And let it cool down. Then add the salt and lemon juice and mix it well until Combined.
– Now heat 2 tsp oil in a pan on medium heat. Once its hot add peanuts to the pan and fry the peanuts until roasted and turn little brown. Remove it and keep it aside.
– Into the same pan, now add Mustard seeds And let them pop. Add the soaked & drained dal to the pan. Saute it until they turn Light brown.
– Now add curry leaves & green chilies. Saute it for a few seconds. Then add Turmeric, hing & mix
– Remove it from the heat. Add rice & peanuts & mix well.
– Adjust salt & lemon juice to taste at this point.
– Serve it with Curd or pickle.
